Armenian Kofta Kebab

  • 1 pound ground beef or lamb
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped mint
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked in water for at least 30 minutes


  1. In a large mixing bowl, combine the ground beef or lamb, onion, parsley, mint, cumin, coriander, paprika, cinnamon, cayenne pepper (if using), salt, and black pepper. Mix well until everything is evenly incorporated.

  2. Preheat your grill to medium-high heat.

  3. Divide the mixture into 8-10 portions and shape them into sausage-shaped patties or balls.
