Grilled Ribeye


  • 1 (1 1/2-inch-thick) boneless ribeye steak
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 2 tablespoons unsalted butter


  1. Remove the steak from the refrigerator 1 hour before grilling to bring it to room temperature.

  2. Preheat a grill to high heat.

  3. Season both sides of the steak with kosher salt and black pepper.

  4. In a small bowl, whisk together the olive oil and minced garlic. Brush the mixture onto both sides of the steak.

  5. Place the steak on the grill and cook for 4-5 minutes on each side for medium-rare. If you prefer a different level of doneness, adjust the cooking time accordingly.

  6. In the last minute of cooking, add the sprigs of rosemary and thyme to the grill to infuse the steak with their aroma.

  7. Once the steak is done, remove it from the grill and let it rest for 5-10 minutes.

  8. While the steak is resting, melt the butter in a small saucepan.

  9. Slice the steak against the grain and serve with a drizzle of the melted butter.
