Albondigas Soup (Mexican Meatball Soup)

  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped fresh cilantro
  • 1 large egg
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 2 large carrots, peeled and chopped
  • 2 large potatoes, peeled and chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish


  1. In a large bowl, combine the ground beef, cooked rice, chopped onion, cilantro, egg, cumin, garlic powder, salt, and pepper. Mix well to combine.

  2. Roll the mixture into small meatballs, about the size of a golf ball.

  3. Heat a large pot over medium-high heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the pot and set aside.

  4. In the same pot, add the chopped carrots, potatoes, onion, garlic, oregano, cumin, salt, and pepper. Cook until the vegetables are slightly softened, about 5 minutes.

  5. Add the chicken broth to the pot and bring to a boil.

  6. Reduce heat to medium-low and simmer for 20-25 minutes or until the vegetables are tender.

  7. Add the meatballs back to the pot and cook for an additional 10-15 minutes or until the meatballs are cooked through.

  8. Stir in the lime juice and adjust seasonings to taste.

  9. Serve the soup hot, garnished with chopped fresh cilantro.
