Apple and Pine nut Spinach Salad


  • 5 oz baby spinach
  • 1 apple, cored and sliced thinly
  • 1/2 cup pine nuts
  • 1/4 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste


  1. Preheat your oven to 350°F.

  2. Spread the pine nuts out on a baking sheet, and roast them in the oven for 5-7 minutes until lightly toasted. Remove from oven and let cool.

  3. In a large mixing bowl, combine the baby spinach, sliced apple, toasted pine nuts, crumbled feta cheese, and dried cranberries.

  4. In a separate small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing.

  5. Drizzle the dressing over the salad, and toss until everything is well coated.

  6. Divide the salad into individual serving bowls and serve immediately.
