Dark Chocolate Brownies


  • 1 cup (2 sticks) unsalted butter, cut into cubes
  • 2 1/4 cups granulated sugar
  • 1 1/4 cups Dutch-processed cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon espresso powder
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 2 cups semisweet or bittersweet chocolate chips


  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

  2. In a large saucepan, melt the butter over low heat. Add the sugar and stir to combine.

  3. Increase the heat to medium and whisk in the cocoa powder, salt, baking powder, espresso powder, and vanilla extract.

  4. Add the eggs, one at a time, whisking after each addition until the mixture is smooth.

  5. Add the flour and stir until the batter is just combined. Do not overmix.

  6. Fold in the chocolate chips.

  7. Pour the batter into the prepared baking dish and smooth it out with a spatula.

  8. Bake the brownies for 25-30 minutes, or until a toothpick inserted into the center of the pan comes out with just a few moist crumbs attached.

  9. Allow the brownies to cool completely in the pan before cutting into squares and serving.
