Blood Orange Upside-down Cake


  • 3-4 medium-sized blood oranges
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk


  1. Preheat your oven to 350°F (180°C) and prepare a 9-inch cake pan by greasing it with cooking spray or butter.
  2. Peel the blood oranges and slice them into rounds, about 1/4 inch thick. Remove any seeds and set aside.
  3. In a small saucepan, melt the butter over medium heat. Add the brown sugar and stir until combined. Pour the mixture into the prepared cake pan and spread it evenly.
  4. Arrange the blood orange slices on top of the sugar mixture, slightly overlapping them.
  5. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  6. In a separate large bowl, whisk together the granulated sugar, eggs, and vanilla extract until the mixture is smooth.
  7. Gradually stir in the flour mixture and the milk, alternating between the two, until the batter is smooth.
  8. Pour the batter over the blood orange slices in the cake pan and smooth it out evenly.
  9. Bake the cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 5 minutes before inverting it onto a serving plate. Gently tap the bottom of the pan to help release the cake. Carefully remove the pan and let the cake cool completely before slicing and serving.
