Brookie Cookies

Brookie cookies are a combination of brownies and cookies, where a cookie dough is wrapped around a brownie filling. They are a delicious and indulgent treat that offer the best of both worlds. The result is a soft, chewy cookie with a rich, fudgy center. Brookie cookies can be made in various ways, but the most common method is to roll cookie dough around a small ball of brownie mixture, and then bake them together.


  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 batch of chocolate chip cookie dough (homemade or store-bought)


  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream the butter, granulated sugar, and light brown sugar until light and fluffy.

  3. Add in the egg and vanilla extract and beat until well combined.

  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.

  5. Gradually stir the dry ingredients into the butter mixture until just combined.

  6. Fold in the chocolate chips and chopped nuts (if using).

  7. Using a cookie scoop or spoon, scoop the brownie batter onto a baking dish lined with parchment paper.

  8. Flatten the brownie dough with the back of a spoon or your hand to create a flat disc.

  9. Take a small amount of cookie dough and flatten it out with your hands.

  10. Place the flattened cookie dough on top of the brownie dough disc.

  11. Repeat until all the dough has been used up.

  12. Bake for 15-25 minutes, or until the cookies are set. Check with a toothpick. 

  13. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
